The first Unlisted Collection: property in Australia, The Old Clare Hotel in Chippendale, Sydney is true to style reimagining heritage buildings. The hotel is an adaptive conversion of the iconic Clare Hotel and former Carlton and United Breweries administration building into 62-room accommodation rooms across a colourful palette of room types. Savvy travelers can expect exceptional hospitality and personalised service in an unpretentious setting - complete with rooftop pool, meeting room, gym and day spa and plethora of dining experiences. The Clare bar at the reception of the hotel playfully reinterpret its own history as the 'pub' area of the Clare hotel creating a warm welcome to all guests.

In collaboration with Unlisted Collection: three independent restaurants are offered - Automata by Clayton Wells formerly of Momofuku Seiobo; Silvereye by Sam Miller, former executive sous chef at San Pellegrino World's Best New Restaurant Noma, and Kensington Street Social by Jason Atherton, Michelin starred British chef and long-time Unlisted Collection: collaborator.
